But MIDI is pretty much the same on all controllers.

Then that signal is converted to a stream or values (between 1 and 128) and assigned to a specific function, either in your DAW or software instrument, what have you. So, essentially that stream of values can really be used to control pretty much anything that a MIDI controller can be assigned to.
